BATTER Pre packaged batter. Follow the instructions on the package. The instructions will say to use coconut milk but trust me and use coconut cream
OR you can make your own batter with the following:
1.75 cups rice flour 3/4 cup all purpose flour 1 TBSP turmeric powder (more if you want it more yellow) 3 cups COLD water or sparkling water 1 can coconut cream (14 oz) 1 tsp salt 4 scallion, chopped (I’ve made my own batter several times and the results are identical)
ADDITIONAL INGREDIENTS Shrimp, peeled and deveined Pork shoulder, sliced (or any cut of pork would do) onions, sliced Salt Black pepper Garlic powder Bean sprouts Oil for cooking
FOR SERVING Lettuce Mint leaves/ herbs Fish sauce dip
1.Mix all of your ingredients under BATTER and let it sit for at least 20 minutes so it blooms
2. Meanwhile, season your pork belly with salt, black pepper and garlic powder, set aside.
3. Season shrimp with salt, black pepper and garlic powder. Set aside.
NOTE: to cook a crepe, you have to play around with your heat setting/ time and see which works best for you. You will have to make a few banh xeo to get the hang of YOUR setting. I have an electric stove and these are the settings/ time that worked for me.
4. Heat up some oil (medium high heat) and wait for it to get scorching hot. Once hot, drop in a couple of shrimp and pork belly and cook for 1 minute.
5. Then add your onions and give it a quick mix before pouring in your batter. Swirl your pan around so the batter covers the base of your pan completely. (Note: before you pour in your batter, give it a mix so your batter is consistent).
6. Then add a handful of bean sprouts, cover and cook for 4 minutes note: add bean sprouts all over your entire crepe or on half of it. Adding beansprouts onto half makes it a little easier to fold.
7. After 4 minutes, uncover and add some oil to the edge of your crepe. Cook un cover for 2 minutes.
8. After a total of 6 minutes cook time, your crepe should be crispy. Fold your crepe in half and enjoy.
9. You can eat it like a lettuce wrap dipped in fish sauce or a salad bowl with fish sauce as your dressing
